The holidays are fast approaching and Steen's Syrup joined GMA to share their Smashing Sweet Potato recipe.
With 109 years of syrup making under their belts, Steen's says they are the perfect ingredient to dress up any holiday or week night meal.

Steen's Smashing Sweet Potatoes
3 lbs sweet potatoes, baked
8 Tbsp butter, softened
1 cup Steen's Pure Cane Syrup
1 egg, beaten
1/2 cup brown sugar
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp salt
1 cup chopped pecans
1 cup chopped corn flake cereal
Preheat oven to 350 degrees. Bake sweet potatoes until centers are soft. Remove from oven and cool. This may be done up to a day in advance.
At baking time, preheat oven to 400 degrees. Peel sweet potatoes and place them in a mixing bowl. Add 4 Tbsp butter and mash potatoes with a fork until no lumps remain. Stir in syrup, egg, sugar, vanilla, cinnamon and salt. Mix well then turn mixture into casserole dish coated with cooking spray.
Sprinkle pecans and cereal over potato mixture, coating evenly. Melt remaining butter and drizzle evenly over the pecan/cereal topping. Bake 25-30 minutes or until topping is golden brown. Yields 8 servings.
