Dean-O's owner shares future of Prejean's restaurant in Lafayette

Dean-O's Pizza owner Tim Metcalf has released details on the future of Prejean's restaurant in Lafayette.

Metcalf, along with his son Greg and friend Ken Boudreaux purchased Prejean's last year. With that purchase, Metcalf says, came a number of questions on what would happen to the restaurant.

"Is it going to be a Dean-O’s? If not a Dean-O’s then what? Why did you purchase. And when will you open," Metcalf said on his Facebook page.

His answer to that is that Prejean's will remain Prejean's. There plans are to bring back what they say made the restaurant popular years ago.

"Fresh local ingredients cooked as Cajuns do with a little cutting edge of culinary talent from our team. The Gumbos, Étouffées, Fried foods and specialty dishes that you loved there previously will be there with an emphasis on quality."

Metcalf did mention that they will bring some Dean-O’s dishes that will not include pizza. Some new "dynamic dishes" will be added to the menu as well.

"We envision it (Prejean’s) to become a local favorite and in the Cajun tradition also welcome visitors from near and far! The music will stay with more variety and probably a little less frequency. Brunches are planned and menu offerings will be amazing!"

His answer to why he took on the challenge of Prejean's is that he didn't want the restaurant to be a "casualty of the times."

Metcalf expects to open the restaurant in February. A target date set for February 8, 2021.

An in person job fair will also be held at Prejean's on January 19 and 23 from 10:00 a.m. to 2:00 p.m.

Prejean's is looking for the following positions to be filled:

  • LINE COOKS
  • PREP COOKS
  • DISHWASHERS
  • HOSTS
  • TO-GO COUNTER
  • BUSSERS
  • BARTENDERS
  • SERVERS

They ask that those who attend wear a mask to the job fair and to maintain proper social distancing guidelines.
