Today, we're off to Crowley for a story you could say was a little sweet.

"I took a baking class way back when, with one of my best friends, and started doing it on the side."

Shantee Manuel took that class almost 20 years ago, even though she may not have needed it. She'd been watching her mom bake since she was a little girl.

"She did wedding cakes and birthday cakes, she was a beautician she had her shop in the back but baked cakes on the side," Manuel says.

Still, that class would go on to have a pretty profound impact on her life.

"I had a real job but also baked cakes on the side, and it got to the point that I had to pick one or the other," she says.

And while at the time she may have doubted that she went in the right direction, in the end its safe to say that her customers feel she picked the right one.

"Of course it's a little scary you're leaving your paycheck to go to something you never know what's going to happen," she says. "It's been great, no regrets."

Shantee grew up in Iota, but now calls Crowley home. Driving out in the early days of the business, all the way to Moss Bluff was an additional challenge to the already daunting task for starting a business.

"The biggest challenge, I wasn't from there so I didn't know a whole lot of people but now we're back home," she says.

She returned back to Crowley just a few weeks ago.

"We know so many people so they are supporting us way better," she says.

She now has a chance to serve up her cakes to friends and family, just like she did in the early years.
