This is where the magic happens, where the staff of Alesi’s makes their world-famous pizzas. And on this Takeout Tuesday, a bonus: it’s the day that Mari Alesi gives me—the author of this article--- his recipe for the amazing pizza sauce.
“Never, never,” says Mariano Alesi, general manager of the restaurant and third-generation restauranteur.
“Never” can either be a long time or a short one—so obtaining Alesi’s pizza sauce recipe is a work-in-progress.
Regardless, Alesi’s Pizza House is open on this Takeout Tuesday, and its overall success during the pandemic has been surprising to its owners. “We’ve been real busy with takeout; for a while we almost couldn’t keep up with the takeout orders, the phone was ringing nonstop,” explains Alesi.
With no customers inside, the waitstaff unfortunately was furloughed, but kitchen staffing has been steady; in fact, Alesi’s actually had to add more kitchen help. “And obviously it was our loyal customers that have been coming for years that have kept us afloat during all this,” adds an appreciative Alesi.
Deep cleaning.. a new coat of paint… and there’s been booth repair. And finally--- Inside dining—albeit at 25%-- resumed this week, so some of the waitstaff is back. So, if you’re headed to Alesi’s….
“You can go lasagna which is amazing, spaghetti and meatballs—you can’t go wrong with that,” smiles Alesi.
And the pizza--- and the pizza!!
“All of our sauces are hand-made every morning, our dough made from scratch, it’s all family recipes dates back to old Sicilian times,” Alesi continues.
Alesi’s--- 63 years young- Lafayette’s first Italian Restaurant—and it keeps coming back to getting the sauce recipe, doesn’t it? “I was kiddin’ about giving you the recipe,” concludes Alesi. “It’s , never gonna’ happen, the recipe is under lock and key, Scott.”
