Made in Acadiana: Cajun Blast

Outside Cajun Blast in Crowley, you might find Brian Boulet over a hot grill. Like any barbecue there are ribs, sausages, chicken thighs, and vegetables. But Boulet also has a spray bottle at the ready. 

"What we're doing is we're coating it," said Boulet as he sprayed the meats and vegetables on the grill. "Basically it's the same principle as basting a turkey for thanksgiving, except what you're doing, is doing it with anything you put on a grill." 

Inside the spray bottle, is Cajun Blast Basting Sauce. It's become the company's signature product, but turns out the basting sauce is actually a byproduct of the company's barbecue sauce. 

"Basically, it's the oil and all the ingredient flavors that the oil takes on when it's cooking," said Boulet. "It comes to the top, you skim it off and you get basting sauce."

Soon, basting sauce joined the Cajun Blast family of sauces and seasonings, all of which are made and bottled in Crowley.

"We can bottle 36 bottles per minute, or about 120 cases an hour," said Boulet. "We've had people in Canada order, we've had interest all over the United States."
