Eunice celebrates Lundi Gras with annual Boucherie

The Lundi Gras celebration continues in Eunice, with an annual boucherie. The 10th annual Lundi Gras Boucherie in Eunice is keeping a tradition alive. 

"Every year we try to maintain the tradition that our ancestors did in Acadiana," organizer David Lance Pitre said. "We try to always encourage and educated all of our guests that come here." 

A boucherie was a way to make sure you had enough meat to survive the winter months. The Eunice community is continuing that tradition by butchering a hog.

"We cook the whole hog," Pitre said. "We start out in the morning and do a boudin, cracklins, backboned stew." 

Nothing goes to waste. "We're cooking the organs of the pig," attendee Angelle Bellard said.  "It's important to do this in order to keep the tradition going, to teach the next generation" 

Pitre added, "Hold on to what we have because it's so special.It's great to embrace our diversity and culture."
