Do you know when crawfish season starts?

With Mardi Gras just a week away many of you are beginning to crave crawfish once again.

But did you know crawfish does not have a set season like shrimp or crab.

As more and more crawfish are raised on farms, farmers are tricking crawfish by flooding their ponds in October to come out sooner.

Thus, it would be up to the Department of Agriculture to regulate the season for crawfish but they don't want to tell farmers when they can try to make money.

Even though no agency has placed a season on crawfish, the weather ultimately determines just how early crawfish season can start each year.

If we get a wet summer and a mild winter crawfish season can begin as early as December and run til June but if we have a dry summer or a cold winter that could push back that start til late January through June.

So, you can begin to find some crawfish in restaurants in December and January but crawfish season really starts to pick up around Mardi Gras and Lent and peaks during March and April when the weather is ideal and the crawfish are the perfect size for eating.

Then in June when the hot, summer heat causes the crawfish to burrow down into the mud that signals the end to the season.
