Nicholls' Folse Institute wins regional honor

THIBODAUX, La. (AP) - The John Folse Culinary Institute at Nicholls State University is preparing for a shot at a national title after a top student won a regional competition for the fifth year in a row.
Paul Terrebonne, a senior culinary major from Larose, won top honors this week in San Antonio, Texas, at the South Central Regional San Pellegrino Almost Famous Chef Competition. Terrebonne's winning dish included pan roasted red snapper with corn maque choux puree; Jazzmen Rice prepared with Abita Beer; and a confetti of pickled vegetables.
Nicholls said Thursday that Terrebonne will take his winning recipes to Napa Valley, Calif., in March. He will be joined by Chef Randy Cheramie, his advisor and mentor, as he competes against nine additional regional winners from the U.S. and Canada.
