Nicholls chef takes Cajun cooking to China

THIBADAUX, La. (AP) - A Nicholls State University chef will travel to China as an ambassador for Southern cuisine.
Chef George Kaslow told the Courier that it was a trade mission to increase sales. But he says it's also for good will, to keep trade and culture lines open.
Kaslow's trip is part of a culinary exchange program sponsored by the Southern United States Trade Association. For 10 years, the association has brought in chefs from all over the world to Nicholls' campus, where they train in traditional Southern cooking using produce and ingredients sold by local businesses.
This year, 12 chefs from Shanghai, China visited campus to learn about Louisiana, Southern soul, Latin American, Native American and Appalachian cuisines.
